Eén machine voor het vormen van gehaktballen heeft een capaciteit van 100-120 kg per uur; in een volledige productielijn worden doorgaans meerdere van deze machines gecombineerd. How an Automatic Meatball Production Line Works
The water within both the meatball shaping and cooking grooves is heated via a steam pipeline, with temperatures regulated by high-temperature, high-pressure valves. This ensures the shaping water maintains a temperature of approximately 75°C, while the cooking water reaches about 90°C. A circulation system keeps the water in the shaping groove in constant motion, allowing the meatballs to be carried by the flow towards the end of the groove. The entire movement is managed by a control valve to ensure the meatballs are shaped perfectly.
Once shaped, the meatballs are cooked in the cooking trough, after which a rotary transfer plate moves them along to the end of the trough at a constant speed. As different types of meatballs require varying cooking times, this can be precisely controlled by adjusting the rotational speed of the transfer plate.
The cooked meatballs are transferred into a cooling trough to facilitate rapid cooling. This trough operates on an open-loop system, where a continuous flow of cold water in and warm water out ensures the temperature remains steady at approximately 25°C. Once cooled, the meatballs are moved to the flash-freezing unit, after which they proceed to the packaging stage.
