From the ripening process through to the cooling stage, the entire line integrates touchscreen preset configuration, photoelectric tracking, frequency control, and PLC-based automation. It also supports independent fine-tuning, full-line interlocking, and fully synchronised acceleration and deceleration control.
The entire production line operates under fully coordinated synchronous control, featuring digital displays for cutting frequency and the ability to continuously adjust noodle piece weight without halting the line. It also incorporates automatic frying temperature control to ensure safe, reliable operation and easy maintenance, resulting in noodles with low oil content and a high product quality rate.
The dough mixer features an elliptical blade and dual-shaft, dual-speed mixing technology, which enables a higher water absorption rate and ensures more uniform hydration of the ingredients. The proofer utilises static dough-resting technology to guarantee consistent dough maturation. The sheeter is equipped with nine pairs of chilled hard-alloy rollers, significantly improving both the quality and efficiency of the sheeting process.
Furthermore, an advanced infusion technique is used after steaming to ensure the flavours penetrate deeply. All surfaces that come into contact with food are crafted from stainless steel and food-grade materials, fully complying with rigorous food hygiene standards.
