1. Material selection
As for the selection, you can choose from various types of bananas, though you are somewhat limited by their level of ripeness. Bananas that are still slightly green or under-ripe are ideal for making banana chips.

Unripe bananas can be a real pain to peel. To make it easier, try blanching them in boiling water for about two to three minutes, then immediately plunge them into cold water; this makes the skin slide right off with your hands. Alternatively, you could simply use a banana peeler.

Once the bananas have been peeled, they are fed into a slicing machine equipped with a diagonal blade that produces perfectly uniform banana chips. The cutting angle can be fully customised to suit specific requirements. This process ensures that the resulting banana chips have a smooth, flawless surface, free from any mechanical damage. 4. Blanching the banana chips
The sliced banana chips are then blanched to preserve their natural colour and flavour. This blanching process takes approximately 20 to 30 minutes. By inactivating the enzymes, blanching ensures the bananas maintain a superior appearance and taste.
5. Banana chip drying
Next, the chips must be dehydrated using the TS800 dehydration machine. Tests have shown that removing moisture makes the chips much easier to fry. The TS800 utilises a centrifugal process to physically extract water from the surface of the bananas.

Once dehydrated, the chips are fried using specialised food frying equipment. These machines support a variety of heating methods, including coal, electricity, natural gas, and liquefied petroleum gas. While coal provides an unlimited heat source, electricity offers a cleaner alternative, and natural gas is much more space-efficient. Alternatively, liquefied petroleum gas can deliver high-intensity heat. This allows operators to choose the heating method that best suits their specific requirements.

The fried chips will undergo a deoiling process to remove excess oil. The deoiling machine operates on the same centrifugal principle as a dewatering machine, where oil is extracted through high-speed rotation within a barrel. Food deoiling can reduce transportation costs and extend shelf life. Consequently, deoiling machines are widely used to remove oil from products such as banana chips, potato chips, fried peanuts, fried beans, and fried meatballs, and are often used in conjunction with food frying equipment.
